Ingredients:
200g (1 ½ cups) all-purpose flour
50g (½ cup) unsweetened cocoa powder
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
150g (¾ cup) sugar
2 eggs
240ml (1 cup) milk
90ml (⅓ cup + 1 tbsp) vegetable oil or melted butter
1 tsp vanilla extract
150g (1 cup) chocolate chips or chopped chocolate
Instructions:
Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
In a large bowl, sift together: flour, cocoa powder, baking powder, baking soda, salt, and sugar.
In a separate bowl, whisk the eggs, milk, oil (or melted butter), and vanilla extract.
Combine wet and dry ingredients and stir gently until just mixed.
Fold in the chocolate chips, reserving some for topping.
Spoon the batter into the muffin cases (about ¾ full).
Top with extra chocolate chips if you like.
Bake for 18–22 minutes or until a toothpick comes out clean (watch out for melted chocolate).
Let cool slightly, then enjoy warm or at room temperature.
